Stuffed Baked Pears
Ingredients
- 4 firm pears
- 1 cup of chardonnay
- 13 crushed vanilla wafers
- 2 tablespoons melted butter
- 1/4 cup raisins
- 1/4 cup blanched slivered almonds
- 2 tablespoons grated lemon rind
- 1/2 cup sugar
Directions
- 1. Preheat oven to 350 degrees.
- 2. In a large shallow baking dish (9X13) stir in 1 cup of chardonnay, sugar and lemon peel.
- 3. Stir until the sugar dissolves.
- 4. In a small bowl combine cookie crumbs, butter, raisins, almonds and 1 tablespoon chardonnay.
- 5. Cut pears in half and scoop out the cores and stems using a melon baller.
- 6. Stuff the pears with the crumb mixture.
- 7. Place the pears stuffed side up into he baking dish.
- 8. Bake for 40 minutes.
- 9. Serve with the juices from the baking dish.
